They're not printing up a new menu every day so keep up with the change of price in a few items. Profit margins in a restaurant are thin enough as it is without doing that.

It's for items which are often fresh daily, and therefore can have inconsistent pricing from the supplier. A common thing this is applied to is seafood. Often lobster and crab will be market price, which means the price for the customer is based off the price it cost the restaurant to purchase the lobster at.
