The intention is to obfuscate the pricing so you end up paying way more than any reasonable person would.
The OP is exactly why restaurants are failing across the US by the way, not only are people broke but they do this shit.
There used to be this diner I'd visit for breakfast on my way to work, after covid they reduced their portions and increased their prices considerably; a hearty serving of biscuits and gravy for $6 became singular biscuit with a spoonful of gravy for $9.99 to try and recoup costs during covid (they got one of those free business loans btw)
They closed down after people on the highway stopped coming in due to the outrageous jewery.
