I've driven past this exact hotel on my way to work multiple times, and it never really looked like it was popular in any capacity for a hotel of that size. The area surrounding it isn't rich by any means and there's no real high profiles businesses near it to attract clientele that would be willing to pay for the room prices there.

These sort of projects are all fiat debt scams, ment to leave someone else as the bag holder.
Even if the company went bankrupt, they were likely still paying themselves $200,000+ salaries for the last 10 years. The debt is ment to be inflationed away while the lease holder collects rent in current dollar values.
