I've had this kinda theory that ashkenazi were just Europeans who pretended to be Jewish to fill an economic niche of lending money. All Christians were forbidden from practicing usery but for some reason it was okay for Jews to do it.

The term ashkenazi comes from scythians. Assyrians referred to them as the ishuzai/askuzai. Another word for scythian is saka/sacae which refers to sons of Issac. Scythia was a vast territory made of many different ethnicities but they were named after their parent tribe, the ashkenazi. They ran scythia like a modern day america. There’s actually proof that pale skin has been selected against in the Mediterranean region, for instance the yamnaya who conquered the Aegan and Anatolia were significantly paler than later populations in that region.

The same can of course be true if a Mediterranean based population move north to central Europe and Russia, over time, that population will evolve pale skin due to natural selection.

So the fact that ashkenazim are pale doesn’t really contradict a possible origin in the Levant, in fact it is logical to expect Jews in eg Poland to develop light skin.

Looking at their genetics, they seem to cluster with Greeks, Cretans in particular. This supports Tacitus history on the Jews, in which he claims they descend from Crete, in the region around mount Ida (Idaea).

Here’s a map of genetic distance between ashkenazim and other populations, as you can see, Ashkenazim is most closely related to modern day Cretans. Crete is in red. Ashkenazim are also pretty close to south Italians and mainland Greeks.
