It's a monument from three thousand years ago, from a time when master builders kept their techniques secret to protect their prestige. Then on top of that, even if the architect detailed how it was built, publication would have been limited only to a few handwritten copies that would only be of interest to a handful of technically minded people. Then consider what the odds are that such a document would have survived the thousands of years to the present day.

It's not surprising at all that no record of how the pyramids were built survive.
