The problematic thing you pay for is packaging and logistics.
First obvious point being that larger packages or portion sizes will be more cost efficient, which also gives the producer incentive to sell small portion sizes, to get more money for less product (and more waste), instead of gallon packs.
Then there's the matter of transporting and storing the product, possibly refridgerated, until you buy it.
And if you don't buy it and it expires you pay for that too in that the product will be more expensive to cover any excess production with actual sales profit.
