SOUP IS GOOD
summer too anons. cold soup good. Cuke, vichy, gazpatch. Borscht serve hot in winters but cool in summers. Can harvest beet and veg in summer garden now:
4 med beet
4 cup beef broth
1 chop onion
2 big spoon red wine vinegar
1 cuke peeled, seeded, and diced
Β½ cup sours cream
Salt + pepper taste.
Cut stem / leafs from garden beet, but leave on skin. Cover beet with cold water and boil fork tender (40 min.)
Drain beet but reserve two cup beet juice and strain. Put juice in pot. Skin + Grate beets and add to beet liquid pot. Add beef broth, onion, vinegar, salt, and pepper to pot. Bring to boil, cover and reduce heat low. Simmer 20 min so all good join incorporated.
Remove and Chill. Fridge it cold. Serve in bowls and top with cucumber and a big spoon sours cream. (Green onions top or fresh herbs also good)
