as for non whites you had some blacks and jeets in the UK, mostly London
France had some blacks, mostly in Paris
Germany had turks
but they weren't a huge part of the population. you so rarely saw anybody was wasn't white. I was completely unaccustomed to being in a major metropolis that was almost entirely white. In America that just didn't exist.
so since everybody was white you had to differentiate based on something other than color. they like any other group did so by ethnicity. East Asians do the same. in China it's the same with Japanese Vietnamese or Koreans. they don't see themselves as an "Asian" but rather their ethnicity.
in the US it's different because color was baked in.
you had injuns, aka redman
blacks, some of the 1st blacks were indentured servants but things transistioned to slavery.
Asians came much later.

however after Bacon's Rebellion, a rebellion of poor black and white indentured servants and some slaves. the wealthy plantation owners shit their pants and devised of a way to separate the poor. they basically treated the poor whites slightly better and just moved over to black slaves. LBJ a few hundred years later basically summed it up, if you can make the poorest white feel superior to the black you'll have his vote. something like that.
so America being a settle nation focused on race as a way to keep the plebs under control.
