lol, well it depends. you dont have to peel them manually if thats what youre saying, thatd be ridiculous and kinda funny, but after you're done harvesting them you have to crush them to start their fermentation.
remove the stalk and whatever leaves fell in, of course
red wines benefit from starting fermentation with the skin and all, when they stop and get cold you can crush them again and filter them, while whites usually need to have everything removed right after the first crushing.

the special yeasts work much better of course because they're engineered for the purpose, but it is still yeast...
if you're in doubt, ask your local farmers for tips, maybe in exchange for some honest work. after all, harvest IS in a month or so!
and unlike what some might have you believe, most of the work to get a good wine happens in the cellar, the field is just maintenance work.

decently slim unless you fuck up by throwing sugar into finished wine (absolutely do NOT do this unless you really like poison)
unlike moonshine, basically all the juice you can get from the grapes is valuable. if you fuck up there are methods to correct course but the most likely bad end is accidentally letting it complete fermentation and become vinegar. not harmful, but also not what you want. it'll be great on salad though, and a viable option if what you get doesnt end up well! it's incredibly easy to turn wine into vinegar.
by the way, if you haven't, don't skimp out on plant maintenance. the chemicals are far worse for human health than what you can use in wine but they help a ton against parasites. they might even be required for infestations and certain disease, especially those carried by pic related! be sure to check.
