Tipping is supposed to be a reward for EXCEPTIONALLY GOOD service. Not for average service that servers are already supposed to provide.
You're supposed to tip because you genuinely feel like the server/cook/etc. did an amazing job and deserves a reward.

Americans don't reward good service, they just pay to avoid getting bad service next time they go to the restaurant. It's literally racket / protection money and they seem completely fine with it.

not too long ago waitresses were selected to be attractive if you were at anything other than the cheapest diner. They were also pleasant and engaged in just a little small talk to make you feel welcomed but not overly familiar. Tipping culture assumes that people have disposable income, and that probably worked out great in the 1950's or 1960's. Young Johnny Smith could get a job at the hotel and if he gave good service the vacationers would peel off a fat tip for the fresh faced young white man who carried their luggage. But now what you have is Juanita Smith Mohammad the mullatto millenial who gives her patented millenial stare at some overpriced restaraunt that is charging you 40 dollars for 10 dollars worth of ingredients and then Juanita is paid like 3 dollars so she expects you to give her another 6 dollars (15% tip) to bring her up to 9 dollars for that work hour. And then she goes home and cries into her dry ramen in her tent out behind wallmart and wishes she owned a gun to KYS herself.

I'm the customer in this scenario and I think it's fucked up that poor homeless jaunita has to live on 3 dollars an hour because she's useless. I think it's fucked up her slave-owner at the restaurant pays her almost nothing because his own razor thin margins are barely keeping the place open. And I'm just a customer who is also strapped for cash, so I don't exactly want to waste my hard earned money to keep a failing business just barely alive enough to almost kinda pay Juanita enough to buy her dry ramen noodles and not starve to death. I don't like that Juanita is mad at me for being too broke to support her when it's her own boss who didn't pay her and her own fault for not arguing better terms of work. None of us is happy in the scenario so I just don't ever go to any restaurants.

By staying at an establishment untill the doors close, you are forcing the employees to work longer for no good reason, other than you showed up late and demand service. Yes it is technically in the right, and they should serve you with no complaints. It's just often times, kitchens start to clean up if there is nobody inside the restaurant near closing. And when you show up 30 mins before the doors close, now they have to make messes again and clean again.

It is basically working off commission, but jewed in that the commission isn't payed by the employer out of the sale price, giving ample opportunity for tax evasion as well as a theoretical limitless top pay. If restaurants just increased their prices by 15% and payed the commission directly to their salesmen/waiters they would make less money. I don't eat out often, and I'm not poor or a nigger, so I have no problem leaving a 15-20% tip at sit down places with an actual waiter.

you go to your usual haunt as a good tipper and the waitstaff will get your order to to your table ahead of randos and skinflints, and they're usually a lot more friendly. in a more civilized era, when front of house waitstaff used to share tips out of their pockets with back of house, you could expect a little more attention paid to your order, too. when i say 'service', anon, i am talking specifically about the parts of the meal that are the restaurant's responsibility--cooking the meal, delivering it to the table, clearing plates, refilling drinks. as i said in my other post, tipping was originally a way to secure these things ahead of others by establishing a reputation at a place regularly visited.

you go to a place regularly, you'll get recognized. if you put money in people's pockets, they want you to keep doing that and will undertake efforts to make it so. they'll bring your food to the table faster, clear empty plates sooner, jump right on refills, rush to bring you a clean fork when yours falls off the table. of course, going to a restaurant you don't frequent means you're taking a gamble, since you'll be an unknown. still, waitstaff will usually treat a newcomer well in the hopes that he'll tip well.

back in the day, waitstaff WOULD pay tips to BoH. the cooks would give food that went to the section of a waiter who tipped them well a little more attention and effort. so by tipping the waiter, you also paid the cook, hence the 15%--waiter kept 10% and gave 5% to the cooks. since the cooks service all the waitstaff, they ended up with 5% from each waiter and so ended up with a tidy sum themselves. when a waiter didn't pay BoH, the food going to his section would get de-prioritized in favor of food going to waitstaff that paid. we even have a saying in america, to 'put something on the back burner' is to make it less of a priority.

It was literally my first time, I was short on cash, didn't even stand out value or quality wise as it was to other places I had been to.
