1. There is no mention of heaven or hell in the Old Testament. There is mention of Sheol, and everyone goes there.
2. You don’t need to accept the New Testament at all. The authorship is questionable at best, and there was no unified “canon” ever. Even in the first century there were at least 3 “canons” of just the Old Testament. All of the denominations have saints who never affirmed Jesus or the resurrection. Like Moses for example.

Catholicism and Protestantism both stem from presupposing that the Church fathers back up their position. Yes, even the Protestants that claim sola scriptura will eventually need to back their claims by referring to the Church fathers due to the fact that the very canon of scripture they adhere to was formed through hundreds of years of tradition without a set canon.
But I'm more confident in Orthodoxy and Catholicism being able to eventually settle our theological disputes, since we at least agree on much of the pre-schism tradition, than with Protestant sects, which are all weird post-Christ Judaized cargo cult versions of Christianity. There is a growing number of trad caths within the Roman Church that see the problems of the magisterium, but ultimately I think they are powerless. The traditional position of the Roman Church is that Roman Catholic ecumenical councils are infallible, so no matter how much they weep and gnash their teeth about it, Vatican II binds them. As for how I know I have the correct canon, it's a simple answer. We use the canon we do because it was recognized in catholicity (in other words, universally) by the church fathers as divinely inspired. The books that we "cut" (I am loathe to use that term. The canon as understood in the Western traditions was still being debated well into the medieval era) we're not regarded universally as canon amongst the fathers. Some held them as canon, some did not. We are not willing to bind our conscience to a "maybe."

A half truth, but not one said maliciously. The fact is that the church fathers were not in total agreement at all times. Some church fathers taught everything we teach, some did not. Which is why, again, we only bind ourselves to the scriptures that they agreed on in catholicity (universally), which is why the Protestant canon is so much smaller than other traditions. The reformers set a very high bar for what they considered to be canon.

Consider too that since the church fathers, while undoubtedly wise men of God, were still men. Their claims are just as fallible as anyone elses and thus must be held to account against the scriptures, which are beyond all reproach. The church fathers deserve our utmost respect and admiration but even they must answer to the word of God. If what they claimed fails scrutiny under scripture, it is discarded and not considered dogmatic.
