We didn't. A lot of our behaviour is still driven by instinct, to the point where history itself is shaped by it.

And that's just the big ones right now. Historically, we murdered people and set up empires just for good tasting spices, that's how instinctually crazy we are as a species.

There's lots of very minor instincts that get activated by various stimuli (for example, women screaming whenever fights breakout, they're literally wired to alert males of danger with screams), most of them are dulled by constant exposure (fear of big wild animals, for example, you see idiot city-folk get wrecked by animals they think are safe and cute all the time) but the rarer ones still hit really hard and people can be unprepared for the resulting impact it has on them (think people freezing when bad things happen, rather than engaging in fight or flight).
