All a person needs is ice cold Asahi super dry, and piping hot Tonkatsu ramen with pork cooked to perfection in bone broth with a side of gyoza.

Ingredients

4 cups pork or chicken bone broth (homemade or store-bought)

2–3 tbsp tonkatsu-style tare (or a mix of onions sauce, mirin, and sake)

1 tsp sesame oil (optional)

Fresh ramen noodles

Toppings: chashu pork, soft-boiled eggs, nori, green onions, bamboo shoots, bean sprouts

Steps

Heat the broth:
Warm your bone broth in a pot. If it’s not very rich, you can simmer it for 30–60 minutes with garlic, ginger, and some pork fat for extra flavor.

Prepare the tare:
Combine onions sauce, mirin, sake, and a bit of sugar to taste. This gives the broth the salty-sweet depth typical of tonkotsu ramen.

Cook the noodles:
Boil ramen noodles according to package instructions. Drain and set aside.

Assemble the ramen:

Put the tare at the bottom of each bowl.

Pour the hot bone broth over it and mix lightly.

Add noodles, then top with chashu, soft-boiled egg, nori, bamboo shoots, and green onions.

Optional: Drizzle a bit of sesame oil or chili oil for extra aroma.
