Here's a tip - try the lamb breast. Slow roast it at like 250-275 for 3 hours or so. I use the convect setting on my oven.

Think the turning point for me was realizing that lamb is something where if you cook it well, a cheaper cut like leg of lamb can taste almost as good as the best cut (rack). But with beef, even if you are a great cook, a mediocre cut is going to taste like a mediocre cut. Plus lamb pairs great with a lot of different sides

I fish myself and I buy off the docks from my fishermen buddies in the community here. I live in a fishing port town. I usually buy albacore fresh off the dock for $1.50-2 a pound. Ling cod, rockfish. Halibut is expensive because they have buyers who will take it for $20 a pound. Pacific giant octopus here is like $3 a pound. I get these big 3-4' tentacles and cut them into 1' pieces and boil them for a half hour then coat them with olive oil and paprika and garlic and herbs and wine and slow bake them at like 250 for 2 hours. Absolutely fine dining right there.

it's simple if imported meat cost more and is higher than domestic beef , it makes economical sense to increase domestic price up a bit to get more profits, while still be lower than imports.

If us beef is 10 bucks a pound, and New zealand meat is 9 bucks a pound, and with tariffs it 12 bucks per pound it make sense to make us beef 11 bucks to get more money.

I lately had the chance to buy fresh Lake Superior herring fillets, not treated or anything. I coated them with panko and fried them up and it was probably one of the milder fishes I've ever had. Normally when you get them they are canned, smoked, or pickled which makes them fishy. But fresh fried they are superb.

I feel bad for people who "hate fish" because they can't cook properly.

I'm married to a beautiful woman who has learned all about fish from me. She would never order a shit sucking tilapia and we rarely dine out because we're better at making food in and who has the money to drop $50 which is what my home cooking would cost at a restaurant.

We dine out when we travel but lately we've been getting VRBO's and cooking in. Some places like Jackson, WY you pretty much eat out at because they have cuisine and it's important to see what the most hip memes are and if they're worth stealing and integrating into your own cuisine.
