My take? We are a way for God to further his understanding of self and concepts he could not yet understand or relate to due to his nature
Example: God a being unable to experience the fear of death or even the concept of death can not sympathize with what it is like to live a limited existsnce or one that results in death and only through the creation of us did he understand this.
Nor can a supreme being understand the concept of guilt. Because guilt implies that you did something you were meant meant to do and felt bad about it, but how can the supreme creator of all things feel bad about something when the buck stops with his.
This help imo give context to Christ as well, not only as a means to provide salvation for us, but also as a way to walk the world as a mortal to understand it better.
Men are created in God's image and men by nature are curious being, we seek to learn, understand, and explore every man does this naturally, ergo this is part of God's nature to learn, explore and understand things he does not yet know he does not know.
