Why are researchers so interested in the Proto-Indo-European language? Do they know something we don't? Just reading briefly about the language I get the impression it was a richer language than even Latin and Greek. Who were the Proto-Indo-Europeans? Some kind of society more advanced than ours that perished in a cataclysm and left no traces except the Pyramids of Giza and other megalithic monuments? But then how did their language develop into many of the languages that are used today as they claim?

Probably because Proto Indo European is the only one that has dozens of descendant languages which have millions of speakers each.
This is the only reason it has more research.

The group of humans who form the ancestry of all people today called "european" or "white".
At the advent of the agrarian revolution (which occured towards the end of the last ice age about 10-12k years ago), their adoption of a pastoral economy instead of an agrarian one due to environmental constraints of living on the steppes, led them to develop the evolutionary strategy of territoral conquest by military aristocracy which would synonymous with "western civilization".
They developed the wheel and metallurgy, domesticated horses and large cattle-beasts.
They expanded and exported their strategy, culture and language over several waves and millenia of expansion throughout MENA, EU, India and Asia.
Their descendants eventually adopted the agrarian technologies of the conquered locals, eventually forming the first city-states and later large-scale empires of the bronze age.
These civilizations later collapsed after yet another indo-european expansion wave came down from the north, from whose descendants the civilizations we know as the greeks and romans would emerge. Later the rest of the european cultures as well.

There's plenty of information on this topic, pretty easy to find some good lectures on youtube. The topic isn't really taboo, it's just not talked about alot in the mainstream.

The anatolians were agrarian farmers who are the second half of the european ancestry. City states existed for several thousand years before that as well as metallurgy, animal husbandry, etc. IEs didn’t conquer Anatolian Farmers but rather were absorbed into their societies. Further IE migrations did contribute to the Bronze Age collapse however. The sea peoples were white lol

What do you even mean by that? "Reconstruct" implies there are no documents left, nothing of the actual language itself left, hence why it has to be reconstructed. So both documented and intact are not words you can use about it. Your post makes no sense, your post is self-contradictory.

I'll try to keep the schizo side of this to a minimum, but the ancient language has hardwired into its code information about reality and history, the erasure of which would deprive the righteous of important information they could use to reform the old guard, whilst simultaneously conferring power to whoever discovers it.
The Poet Robert Graves retells the history of how the Christian Church restricted Welsh poets in their time to only being able to write poetry about: The Church, The Nobles, and God, but they also banned certain meters and words, and overtime they completely restructured the language to occlude any opposition to their rule, as well as any link to the past.
Keep in mind that the druids were not the ultimate expression of Friya's people, but they possessed a piece of the puzzle, and by banning and restricting poetry they disrupted the Druidic Oral tradition, particularly those elements descending from the proto-Europeans.
