It contributes plenty to the GDP. Per capita places like Grindelwald bring in quite a lot, but they also get ruined by tourism.

Places likes this need constant maintenance and upkeep which costs a lot of money. Also if you want infrastructure at all it's going to be expensive.

Nobody hangs out in a place like that. It's just a couple of farmers and hoteliers that live there if at all. There's no connectivity and if you miss the bus that comes every 1-2 hours you are out of luck. These places look good on a post card but they fucking suck to live at for daily life. Some of them are in snowy areas so you can go and ski at least but other than that there's nothing to do all year around.

would be cool to stay there at some property where you could help with daily maintenance chores and do communal meals, rather than be waited on as a regular tourist, I would like to see that kind of tourism take off

There is a trend that the children in those houses want to rather live in the cities because better jobs options. So more and more houses become empty or straight up sold to some big companies making some tourist hotel out of it.

Most of these places don't have anybody waiting on or for you. They aren't very fancy either. You basically pay the fee and somebody will either come and give you the keys or place them somewhere for you.
Then you are expected to do the chores. If the owner gives a shit you will get a communal meal kind of thing, but most likely not.
Since there is nothing the owners and their families nowadays also don't like to live in or near these places.
Most people that go to these places are school groups or clubs who rent out the place for a week or a weekend.
Tourists don't really live in these places either (except maybe the hotels). I wouldn't trust a tourist to do the chores at such a place and also be worried about damages they leave behind.
