That is not ground beef. Look closely at the meat. No part of ground beef is actually pink. It’s either red(flesh muscle tissue) or yellowish white fat. The pink parts are mechanically separated “pink slime” byproducts which they are allowed to sell as pure beef. You have been warned. Some companies like Costco Dont use pink slime. I was at a place today that had it in bulk for $4/lb and I got a 10lb slab of NY strip for $7/lb. It is up slightly.

People need to search up "draught conditions beef market" along with information regarding forced culling of herds. The carbon monoxide binds to myoglobin in the meat, you fucking moron. It can't be vacuumed out. It is now chemically bound inside the meat as carboxymyoglobin. That is why it stays red for so long. That wouldn't matter anyway because vacuum sealing doesn't remove the CO, it just removes excess volume for the gas. The concentration of what remains is still relatively close to what it was before sealing. If you weren't an idiot, you would understand this.

Yes, it can. It's called CO spiking. It can be done by injection or by the vacuuming process itself by removing more of the lighter gassed like nitrogen than it does the heavies gasses like those containing carbon. The CO and even some CO2 will remain and over time will fill the less dense pockets vacated by nitrogen and even slightly heavier molecular oxygen.

But here is a case where CostCO was caught improperly packaging it in concentration too low to be effective or from a leak in the packaging. Don't ever say CostCO doesn't use CO ever again.

Contrary to what morons like you believe, old ground beef does not turn brown from the inside out because of "lack of oxygen inside the meat". Instead that brown discoloration is a product of the presence of oxygen. It's the other way around. It turns brown from the edges first. Form the picture you can clearly see CO working it's way inside the meat.

I should add that you can take freshly processed ground beef and put a pin hole in it, place it in your refrigerator and within 2 days it will turn color. The meat will still be safe to eat, but will be grey-brown on the outside. You can break it open and still see the red or pink inside. I've done this dozens of times.

That aside, the only tried and true method to determining whether the meat is spoiled is to smell it. If it makes you recoil or gag, toss it. Trust your instincts.

It's not some big conspiracy, but it does make the meat more pleasant to look at for most people.
