Contrary to what morons like you believe, old ground beef does not turn brown from the inside out because of "lack of oxygen inside the meat". Instead that brown discoloration is a product of the presence of oxygen. It's the other way around. It turns brown from the edges first. I should add that you can take freshly processed ground beef and put a pin hole in it, place it in your refrigerator and within 2 days it will turn color. The meat will still be safe to eat, but will be grey-brown on the outside. You can break it open and still see the red or pink inside. I've done this dozens of times.
