The reason is overproduction, with food especially. You can't run a bakery and just run out of bread before close, not only are you missing out on potential sales but the knock on effect of customers who came to your bakery for bread going home empty handed means maybe they just won't come back and go someplace else if you keep running out of bread, so you deliberately overproduce.

Now the problem with this is that now you kind of need to throw the excess bread away, because if you just gave away whatever you didn't sell at the end of the day, a lot of people would just wait for the free bread and now your sales plummet and your overproduction problem just got exponentially worse.

So the only solutions are to destroy your overproduced goods or you go full communism and just have bread production supported and distributed publicly so there's no free rider vs paying customer problem

I haven't seen a Meijer with live lobsters since 2015. They used to be about selling healthier food like whole foods, but recently they've turned into walmart with a bigger produce section. They still have more organic food and grass fed beef than walmart.
