Why is that though? Why does a singular word make them chimpout so hard? I've heard people say because deep down on a subconscious level they know they are inferior and to be demeaned like that effectively heightens those feelings, but that would require self awareness, so I doubt that's the culprit. Some people say it is because it boils down to epigenetics, they have a high propensity to violence, so even the most frugal thing is seen as an opportunity to get violent, and throw a fist. Examples are literally any fast food chain, airports, gas stations, etc.
