My family is like this, I took one of my cousins there once and she had never heard of it. It's one of those drive by places to those types because nothing in particular about the logo or name was indicative of a restaurant, it was one of those places you would have had to have grown up with or be taken by a relative to know what it was. It doesn't have the big name like "Denny's" or "IHOP" on it but I thought that was a good thing because it's better than those crummy places especially because of the store they have.
To put it into perspective of why I believe this, Nintendo's boomer non gamer advertising worked on a sheltered family of two girls who never owned a console or played a video game in their life. So I have no doubt the non breakfast loving quirky chungus wife/man child husband will love this shit. Also because they serve alcohol now they'll make their money back no matter what, it's a big profit in restaurants.

The dream is to expand it to many more locations but you can't open a country store diner in most of the country (according to the jews). So they wanted to "refresh" the product to leverage the brand into a massive expansion.

this is correct, the food is extremely mid. that's why the branding is so important. people go there because it's folksy, non-pretentious, and cheap. if you ruin the folksy appeal the product isn't good enough to maintain. See: Bud Light.
