Which fats are healthier for human consumption?:
- extra virgin olive oil
- organic lard

Nutritional 'eggsberts' will claim that lard is bad because of its higher saturated fat proportion. Carnivore diet 'eggsberts' claim the opposite, that saturated fats are better than unsaturated ones. But which is it?

EVOO is healthiest oil on planet, but its healthiness depends on the polyphenol content. Bad varieties on the supermarket aisle can have very low polyphenol content. Ripeness is sldo important - more fresher, more polyphenolic content. Also when picking oil, choose one that is sourced to just one country.

Just make clarified butter over low heat, i use an amish butter roll. You can even walk away, every once in a while use a spoon to pull the top stuff off. Lasts a long time in a jar on the shelf, has higher heat point.

For me it is butter, coconut oil, and sometimes olive oil. Don't worry about saturated fat or eating cholesterol rich foods either because the whole hysteria over it started with the sugar company to cover up how bad sugar is for people. Now they don't even put sugar in foods anymore they use corn syrups and the lies about saturated fat/cholesterol live on to this very day because people don't want to admit they were wrong but instead double down.
