Well first off, the Old Testament was written in Hebrew, wherein "wisdom" is a feminine noun. It's like the way you'd call a boat "she" even though your boat isn't a goddess or a person. Many Greeks just translated it to Sophia because it's a personified noun that equates to a similar thing. They weren't stupid. They knew what it meant in context.

Also, Greek is not a Hebrew-inspired language, either. The LXX is older than the Masoretic texts and the Leningrad Codex. The Dead Sea Scrolls and the Vetus Latina ard the only two documents older than the LXX, but the problem is that they're either incomplete (DSS) or unreliable (Vetus Latina).
