I've always suspected that Russia would create a new Soviet Union.
Unlike the old communist USSR, the new USSR would be a capitalist organization similar to the EU.
A new union used to unify Russia, Belarus, and Eastern Ukraine.

This has already happened with the Union State between Belarus and Russia, it will be expanded to include Eastern Ukraine with more binding laws and integration in the future.

They already have an EU like organization. The Eurasian Economic Union. They also have a Union with Belarus (The Union State) which is like and even closer EU.

I can see Russia absorbing Eastern Ukraine and maybe Belarus (but Union State is probably fine for them). Perhaps when they reach Moldova they'll try there too. I think they'd be fine with other post soviet states joining the EEU so they don't have to worry about subsidizing them too much, but it keeps them in Russian orbit. After the Ukraine War ends the eye of Sauron will turn towards these other countries and they'll fall in line again. They might even try for the Baltics once China invades Taiwan.

Russia gains nothing here. They have nothing of value, they are simply useless people who will be immediately resentful of Russian occupation that the Russians need to constantly police and monitor.

NATO absolutely would use them as pawns once Ukraine is finished to force Russia to pacify them and try to get the US invested in their war again, but they'll most likely end up with a genocide and still no US in Europe wanting to run the Cold War back.

I've heard this from Russian commentators as well. There isn't much to gain other than strategic depth. Although they could just burn everything down and expel the population to the EU. But it would make more sense to have some kind of diplomatic solution (no NATO, Or wind down NATO presence by a lot. Maybe better access to Kaliningrad).

Ireland is Western Ukraine if you really want to use this analogy. Eastern Ukraine is probably like the North of England bordering Scotland where people often have family in both countries but there is no real difference.
