At low speed G's aren't very high, even at high angles of attack. But trying to eject while your plane is accelerating and diving at the same time is not a good idea. Even if the parachute has the time to deploy, you'll still die because you'll hit the ground too fast. Maybe that's why the pilot didn't try to eject.
