Rumble Roses is up there. It's basically a tweaked version of Here Comes the Pain.

Journey of Wrestling is the most fun booking simulator/GM Mode game I've played.

iirc konami cant make the game due to them not caring about established franchises and the rights of the game itself being stuck in japanese copyright limbo due to japan having some weird copyright tier and konami giving partial rights of it to one of the producers
