No he'd have to eat the wood and be wood for it to be cannibalism. I know he's a bit of a block head but it's not specified what sort of a block it is, but more importantly no consumption of wood was show.
It was more of an act sadism and desecration for sexual gratification, the tree was precious to the injun boy so Daddy Dijak wanted to leave his mark on it. The tree being erect symbolized the injun boys "wood" and pride that needed to be whipped down.

Just because you don't CONSUME the body parts doesn't mean it's not cannibalism. Cannibalism is when a type of lifeform doesn't respect the natural course of events and interbodily boundaries/distinctions (intrinsic and extrinsic alike) and thusly then those same individuals act in a way that serves themselves in/thru a destructive (zero-sum) utilization of some other similar but ultimately existentially-disparate lifeform (or its body parts). No, good sir, cannibalism is defined by consuming of flesh of the same species by dictionary definition. The consuming is required to be cannibal, otherwise it's just murder and trophy collection from a corpse which is a desecrated of the corpse.
