If only it was that simple. Most people I've spoken to don't actually talk about themselves unless prompted. Continuously, but not too continuously, so it doesn't feel like an interrogation, and of course you should make sure to avoid sensitive topics (which vary from person to person; no hints in advance). Also, responding with interest and approval won't cut it; you need to know enough about whatever obscure hobbies they have to carry a conversation. No, they won't explain basics, why do you ask.

If their interests don't align with yours, you can at least acknowledge the merit behind theirs, and try to find a common ground in some broader category. One of my coworkers is really into warhammer, and I don't know shit about it, but we find common ground in worldbuilding, as I like to write. If hobbies are a lost cause, just try to bond over whatever shared motive brought you two to acquaintanceship in the first place, show your value as a worker/friend/whatever else.
