Anything signed is worthless, she can always claim she didn't know what she was signing or you forced her into signing it. I don't think the right to child support can be waived like that anyway. If she wants to she certainly can take you to court. Best way would be to do it yourself at a level you are comfortable with so she keeps the court out of it.

Nothing you can do. You're fucked. Women are allowed to abort their babies because it might "ruin their life" but men can't do anything. You're on the hook for the next 18 years whether you like it not. A contract won't save you. In almost all states child support is considered the right of the child, not the woman in question, so the parents can't agree to waive it. Even agreed that she would abort the baby then went back on it, or if she agreed that she wouldn't hold you responsible for it, the court will still order you to pay.

Apparently a woman can't even force you to take a DNA test and she has to sue you in court to establish parental rights. And because of how stupid most people are with money, the vast majority of women don't have the cash lying around to sue people.
I have heard of cases where dudes got off without paying child support simply because the woman they have knocked up lacked the money to sue them. I've also heard of other cases where the woman didn't sue because the man basically subjected her to psychological torture and all sorts of threats, which scared her into not doing it.
