very simply, with multiple independent variables (i.e. factors for attraction) that all vary from individual to individual, you'd expect the ultimate distribution of ratings to be somewhat gaussian. the women's graph really should only be skewed if women overwhelmingly have a very narrow standard for attraction, which makes sense, and/or if women don't really care about differentiating between lower rankings.
that latter point i think is more obvious with elo ratings, which typically do (iirc, and a cursory view suggests so in this case) present a right skew; it's kind of hard to differentiate between a 2/10 and a 3/10 for anyone.
all this to say that i don't believe men are any less shallow than foids but that men as a group certainly have more varied taste, which is likely caused by women having more avenues for self-expression, etc. and those spawning "types" than anything else.
