600 cals is too little you are going to lose muscle mass instead of fat, and then become skinnyfat (been there done dat, I'm skinny everywhere but my stomach now. And loose skin yay.)

Also weigh yourself only once to twice a week in the morning before youve eaten or drank anything, anything beside that will be wrong. Also one pound of fat is 5000cals so assuming your maintenance is 2000, thats 5000 - 1200 = 3800, which is so small it wouldn't show a scale difference anyway.

It makes you insulin resistant so your cells can't even absorb glucose properly. It is physically impossible to gain weight on a calorie restriction that puts you below your energy expenditure. If you gain weight it's because you're eating more than your energy expenditure or you're retaining water in which case go see a doctor. Losing weight as a result of disease is fundamentally different I don't know why you even brought that up, no disease makes you gain weight during an energy deficit though.

I thought you'd be smart enough to know the inverse of hypothyroidism is hyperthyroidism, but anyways with that your body produces too much of the thyroid hormone, which drastically decreases your BMR. so you are thermodynamic-ing, just a whole shit ton slower like with pcos. It also causes a lot of water retention. A lot of medications or even just eating too much sodium can cause a shit ton of water retention.

She could have a 1600 maintenance and you could have a 2500 one and you could both eat at 1200 which would be "eating less" for you, but not a lot for her. She would have to cut out breakfast and maybe even lunch just to lose the same amount of weight you do just eating a smaller portion at dinner.

All you really need to know about nutrition is to eat mostly minimally processed foods. So cut out the pizza, bread, candy bars, and ice cream. Eat beans, apples, spinach, oats, chicken, fish, whatever in there you like but get a variety and make sure you eat lots of vegetables and legumes.

Usual medical advice for diabetes is a diet high in fiber which is also generally high in digestible carbs. Carbs aren't bad for you at all and the best way to lose weight is to eat lots of fiber.

Legumes are high carb. You can't just eat vegetables there's no way to get all your calories from them. That one guy even treated diabetes with a white rice diet which isn't even fibrous, it comes down to losing weight mostly.
