not a woman but i make homemade noodles. it's the only way to avoid tons of sodium and sugar. wheat flour contains and enzyme that breaks resistant starches down into sugar over time. most commercial flour is all digestible starch and sugar with little protein or other nutrients. getting good flour means very little sugar and more resistant starch, protein, and vitamins and minerals. resistant starch can't be absorbed by our bodies so it reduces the effective calorie content of noodles. you could eat 1000 calories of noodles and only actually get 600 calories. you still feel full but you don't get fat. i eat a ton of alkaline noodles mostly in chinese noodle dishes or just plain noodles with chili oil and scallions.
