Speech involves timing in a way that writing doesn't. With speech, you have to relay your thoughts and sentences as you form them, leading to stumbling, hesitation and reconsideration. This can also be extended somewhat to text; the format (time sensitivity, typing indicators, etc) place increased urgency on speed causing you to have less time to spend on choosing your words and sentence structure carefully.
But when it comes to emails and internet posts like this one, those limitations are removed and you essentially have all the time in the world to get your point across the right way. I deleted about two thirds of this block of text during its construction but you wouldn't know that unless I told you. With speech, you aren't afforded such a luxury, so you stumble.
