I have only fermented raw goat liver and salmon muscle meat. I never buried the jars. I have only kept them under a shed like this, or within the shed. I've only done it during the spring and summer too. The meats I've fermented didn't taste or smell good, but they made me feel much more physically relaxed, content, and prosocial than the usual. I imagine it would be more effective and appealing to the senses if the meats I used were totally unadulterated. Everything I used was previously frozen for long periods of time. I don't eat salmon in any form these days

Chicken liver filtered me hard but veal and duck galvaged and not were quite good

The only other liver I've had is beef liver. To me it was exactly the same as goat liver in every way. All of the organs I've eaten were frozen for at least a few weeks before I got them, which made them taste and smell worse than they're supposed to. Beef hearts are still appealing despite the freezing, but all the other organs I've eaten ranged from neutral to bad. Livers and kidneys were the only organs that made me feel noticeably better right after eating them. I still haven't eaten any eyes, thyroids, thymuses, lungs, intestines, or gallbladders

Pork brains are very good too, by the way. In the Southern US, our great grandparents used to cook them with white gravy and biscuits or as part of scrambled eggs. They are getting difficult to find these days.

I've only had veal brain, and only on one occasion since it was so expensive. It was $20 for 0.7 pounds. It was very soft but didn't have much taste. Some people say fresh raw brains taste like raw egg yolks

It's not that bad, but I certainly prefer the taste of muscle meats. Beef and swordfish are my favorites. Pork is pretty good too. Over the last 3 years I've mostly eaten raw pork and eggs. These days I mostly eat beef brisket, swordfish, some eggs, and occasionally some organs

I love liver but I cook it. My favorite things are ramaki, pate, creamed liver and fried livers with cocktail sauce. I am tasked with bringing the ramaki to thanksgiving this year. I soak them in teriyaki sauce overnight, put them with a water chestnut and bake them in the oven until they are done then more teriyaki then baked until the glaze is set. Ok end blog
