I go through pickled eggs like a maniac.
60 large eggs in an electric pressure cooker. Cook 4 minutes then manual release and straight to icebath. 1tbsp crawfish boil per pint jar and 1tbsp chili flakes(Chinese is hotter than cayenne, korean is not hot at all). 5% vinegar, whatever kind you like, boil then fill jar and seal. I get 6 to a jar loose, 7 if squishing them down.
Very difficult to make them spicy, suggestion is to make pepper vinegar first if you want spicy eggs. Hot sauce can be added, but will be muted in final product. Refrigerator is a meme, I keep them out until they're gone and never got sick. Needs two weeks before they start getting good, never had them last longer than four weeks. They probably continue to improve with age forever.
