The whole point is that the fish is basically the freshest it can be when being killed just before it gets cooked.
You buy it alive a couple days before, then let it live in the bath so that once you kill it yourself, there will be no refrigeration needed. Putting food in the fridge, especially seafood, just makes it worse anyway. Texture and taste. Nothing beats fresh.
Can you not buy fresh, living fish from large tanks at your supermarkets? Or is that just special lobster treatment?
