it really won't. you miss out on a bit of the maillard flavor, but you can see it's still got some on the edges. as long as a steak is cooked medium rare it's going to taste decent. if yuji makes steak again he might want to salt the steak a few hours before cooking to dry the outside and then cover it in oil to promote browning, but those things are highfalutin things that most home cooks don't need to think about
