Non-Repeating Patterns
Is it true a non-repeating pattern would contain all information in the universe in it including HD video footage of past and ancient events? As well as HD video footage of future events as well?

I just realized something. Since some things in the universe contain repeating patterns, does that mean this super pattern would repeat? Or are these repeating patterns merely sub-sets of the larger non-repeating pattern?

would they contain all constant patterns? nope. you've got to pigeon hole your space if you want a guarantee you cover all points.

e.g. simple counting is a non-repeating pattern, and it doesn't contain all paterns

No.
Consider the pattern: 101, 1001, 10001 is infinite and not repeating.

Remove the "pattern" bit. In fact, almost explicitly make it a non-pattern.
A sufficiently chaotic system will visit all possible states.
Pi is a famous example of this. All possible permutations of integers exist somewhere in it if you calculate enough digits. Same goes for any other irrational number like root(2) or phi.
Even coin flips:
If you took the set of all coin flips that have happened and ever will happen in sequence of when they did/will occur, assuming the universe and coin flips will exist infinitely, all binary permutations will exist somewhere in that sequence.

Many will say this is not proven, even though it's been shown to be random to 20 trillion digits.

What pattern is missing (noting that all letters and colors and sounds and whatnot can be encoded as numbers)?

Isn't this what people say about pi?

The Big Bang only happened once, as far as we’re aware, but that doesn’t mean it isn’t repeatable, or reproducible. Reality could be a garden where universes bloom and wilt like flowers.
