Poo has protein, undigested, as well as some fat. Its also toxic because poo has bacteria that eat the food and have poo of their own, which is chemically toxic to humans. You have to wash it down and somehow isolate the protein and fat.

So what they do is decompose the poop using some microbes then feed the methane to some tasty microbes and then harvest them to make food. Not that crazy. Don't know why we had to spend millions to fund that.
