I made this like two years ago when I was deeply researching the subject and figured I should post this shit somewhere publicly. I’ll probably post it elsewhere as well. It’s not well formatted or organized, it doesn’t include absolutely everything I’ve seen, some of my explanations might not be totally right, and I think some of the links are messed up but I don’t feel like fixing any of that shit now. And regardless of all that this is still the most thorough assemblage of information on the topic I’ve seen anywhere. I’ll probably update it at some point in the future. And if you have any opinions of critiques of my stuff I don’t really care because I’ve already formed my opinions on this subject and am not going to change them because of some slander on a decaying anonymous image board.

Skimmed it. A few nitpicks:
-The low bioavailability of certain micronutrients in plants isn't necessarily a bad thing. With iron, for example, you can easily fuck yourself up consuming too much. And this isn't particularly uncommon in people who eat a lot of meat, even in combination with plant foods.
-the low/nonexistent vitamin C values reported in meat does not come from an "assumption there isn't any." There genuinely is only trace amounts present in muscle tissue. It's stored in the skin. If you want to acquire your vitamin C in this way, make sure you're eating skin. You mention the innuits here. Seal skin has remarkably high vitamin C compared to other animals.
- calories is a good measure of energy acquired from food in most cases. We don't run directly on heat, but this is trivial. The amount of energy released upon burning corresponds linearly to the ATP you can generate from that food because they are analogous processes.
