It's basically just a statement of the simple fact that to measure something you have to interact with it. It's as if tou are blind, and to measure a billiard ball you have to strike it. So you can measure its location, but by doing so you change its location. Same for measuring it's motion.
It's a simple statement of the issues of taking measurements. But of course NPCs take it too literally. I'm astounded with how highly educated people seem to not have any intuitive grasp of the world. With people like this doing 'research' it's no wonder science is swamped with bullshit

What's wrong with that? Photons interact with most things. Case in point, the fact you can see due to photons interacting with your eyes.

I think people misunderstand this idea. The point of the uncertainty principle is that there are certain pairs of observations where getting more accurate in your observation of one directly comes at the cost of the accuracy in the other. This is because the observations for both share the same information content, so when you prioritize one, you are necessarily leaving the other to have less information "left over."

Not every pair of quantities of interest will have such a tradeoff. Some will, however.
