if i made a machine that can suppress fusion and pointed it at the sun what would happen to the poor star?
would it just slowly turn into a huge gas giant?

Anything below about 8 solar masses in weight would slowly cool down and turn into a cold ball, yeah.

I suppose it depends on the type of magic system you use. You could for instance turn it into a sun of ice which would turn it blue, the side effect of that could turn days cold and nights warm for instance.

I feel like the area you're suppressing would reignite as the sun rotates away from where you're pointing at. Though some of the suppressed area might float off into space so maybe over time the sun would slowly shrink

Fusion pressure holds the core of the sun up
If you somehow magically paused fusion indefinitely the sun would immediately shrink quite a bit. It would keep shining for a while though. I think the time it takes for energy from the core of the sun to reach its surface is estimated in the thousands of years

that's true
the fusion might stop but there would still be a lot of energy going to the surface
