Chinese food has a shitton to it and many regional variations. I'll never eat there myself because I don't want to consume gutter oil or get disappeared for saying something bad about their leaders but the dishes themselves are fantastic. Their people can wallow in their authoritarian misery while I scavenge the parts of their cuisine that I enjoy. I handwaved their food for a long time till I tried really getting into it and there's a lot to enjoy.
