For the record, this genre was traditionally called the "survey sim"; in contrast to a "study sim". A survey sim is a game with simulator-level modeling of the factors that are most interesting (e.g. for tanks, armor modeling; for planes, flight/damage modeling), but without delving so far into the minutia that it becomes a game you need to "study" a specific vehicle for a long tie to even be able to play.
Two great examples of this for flight games are the Microsoft Combat Flight Simulator series, and the Strike Fighters series. I particularly liked the "North Atlantic" module for Strike Fighters 2, where you fight the Soviets over Iceland in an F-14.
