Rail jumping is a form of skill expression. If you've played World, you'd understand how volatile rail grinding and jumps can be. You don't just immediately magnetize to the rails like a Smash 4/Ultimate characters does to the ledge. It's more like Smash 64 where if you don't precisely hit that ledge you just miss it and die.
Not only that, but the rails do add a large degree of skill expression since they're often times faster than taking tight turns on the road, but you can't get back on when you fall off, you can be bumped off by anyone else who takes the rails, and items will follow the rails basically turning them into shell magnets. They add a large degree of risk/reward to racing and are fairly difficult themselves (depending on the stage of course).
