The most prominent issues were found in the football stadium kitchen, where the main kitchen cooler was operating at a temperature too warm to be considered a safe temperature, with an ambient temperature of 55 degrees Fahrenheit. According to food safety standards, cold holding units should maintain food at or below 41 F, but all food inside the cooler was found above this limit.
>Walk-in coolers two and three were broken, with ambient temperatures of 58 F and 59 F. Both coolers were still in use for storing and thawing food, according to the notes from the health inspector.
>Due to this, the inspector noted seeing "rotten cilantro, jalapeño peppers with fuzzy growth, bloated bags of shredded cheese and bloated half-and-half" in the main walk-in cooler under violation 13.
The inspection also uncovered signs of an active rodent infestation at Club Stand No. 100, according to violation 38. At the Spectra Food Service Stand No. 131, rat feces was spotted near the food warmers, noted under violation 38.
