While umas are definitively established to have horse souls (not that umaverse science could possibly now that), there's nothing about the actual physiology of their tail that that cannot feasibly be expressed by primate genes with the correct selective pressures. Point being there could be nothing equine about them at all from a strictly anatomical perspective.
The ears on the top of the head on the other hand, are a different story. I expect umas, as in kemomimi in general, would have some funky looking skulls.
It would be interesting if their superb force generation (with seemingly identical musculature to the average ningen female) could be explained by neuromuscular adaptations resulting in a massive improvement of their brain's ability to fire muscles efficiently and quickly, and the moving of the ears to the top of the skull somehow figures with that. It could be that umamusume are quite literally wired to run fast.
All assuming that they are a naturally evolved species.
