Texas was just as desirable as anywhere else in the west, especially the part of Texas that is east of the 100th meridian since it actually gets enough rain to grow crops reliably enough to sell commercially.
Texas was also closer to Louisiana and had land nearer to the Gulf, making it prime real estate as long as you could deal with the Indians and Mexican government, which they eventually did.
