There's an old TGA thread about converting ironjawz themed artillery, you might be able to find some inspo there.
In general I think ogre crossbow bits might be a good direction, the bloodpelt hunter, hrothgorn and a couple others have some. They work reasonably well on ironjawz bodies.

Death is tricky because obr are the only real option, unless they come out with a whole new army which is pretty unlikely.
And obr makes for a weird launch box, they're kind of niche and all their basic archetypes are already present, they'd have to include some really weird shit.
