For the dream part, see >>716245447. For the rest: you're looking for Paleblood. The game opens with the Blood Minister going "oh yes, Paleblood..." showing he's talking about it as a response to your question. Then after ministration, you find pic related which in JP is made clearer that you wrote yourself. The description of the clothes you start the game in end with "Without memory, who will ever know?", establishing that the intro's blood ministration left you with amnesia. So you came to Yharnam looking for Paleblood, but you now don't remember why or even what that is. Great.
So blood ministration is basically being injected by Old Blood from the dungeons, which as an outsider means you end up having a bad trip. That is probably what the Blood Minister refers to when he says "You may think it all a mere bad dream...". He probably doesn't mean the Hunt, but the hallucination with the werewolf reaching for you. Only then, the Messengers pop in and choose you ("Ah, you've found yourself a Hunter"). There's no reason for this, you're just randomly selected to be this Night's main Hunter, and Gherman himself tells you to not think about it too hard and to just go out there and kill some beasts.
So you ask Gilbert, the window NPC in front of the first (second) lamp in the game, about Paleblood 'cause you read your own note about it, and he tells you he doesn't know what that is but that the Healing Church is Blood HQ so they might know something about it. That leads you to Cathedral Ward and on the way you find out about Byrgenwerth from both Alfred's dialogue and the note in Oedon Chapel's basement. Your search of the Church bears no fruit because it's empty except for one furry wife, and upon touching a funky skull you find even more out about Byrgenwerth so you decide to just... head there, because I mean fuck it not like you have a better plan.
