Both Wallace and Juan's roles were to show Ruby how gentlemen can reach the highest most respected roles in their society (gym leaders/champion) and even further beyond, that Ruby doesn't have to be some 7 foot roided out WWE bodybuilder just to be male, and that his feminine interests don't doom him to being a fag either. He just had to grow up and be responsible. A big part of this is not abandoning Sapphire (his "wife") which Wallace/Juan continually remind Ruby about.

Meanwhile, trooning out is the complete opposite of being responsible. You could say the same about the stereotypical "gay lifestyle" that prioritizes hedonism above all else. So if Ruby had the right people around him, they would prevent him from going down the tranny pipeline or anything similar, or at least try to. The only problem is that Ruby's stubborn arrogance is so extreme that once he's made up his mind he won't change it since not even Norman beating the shit out of him made Ruby abandon his girly ass contests, he does have a backbone but without context it's like he only doubles down on the weirdest things.
